Easy Fresh Spinach Dip





Serves 8 |
Ingredients:
| 2 packages fresh baby spinach |
| 1 tablespoon butter |
| 2 cloves garlic, minced |
| 1 package cream cheese |
| 1 can artichoke hearts, drained and chopped |
| 1/2 cup sour cream |
| 1/2 cup shredded Mozzarella cheese |
| Baked pita chips, for serving |
| Fresh pita wedges, for serving |
Directions:
- Preheat oven to 350° F.
- Put spinach in a large, microwave-safe bowl then microwave until wilted, about 3 minutes. Drain, pressing spinach between paper towels, then chop. Reserve for later.
- In a nonstick skillet set over medium-high heat, melt butter. Add garlic and cream cheese. Cook until cream cheese melts, stirring constantly for 3 to 4 minutes.
- Fold in artichokes, sour cream, 1/4 cup mozzarella cheese and reserved spinach; stir until cheese melts.
- Transfer spinach mixture to a 1-quart shallow baking dish then sprinkle with remaining 1/4 cup mozzarella cheese.
- Bake until bubbly and hot, about 15 minutes. Serve immediately with baked pita chips or fresh pita wedges.
