Broiled Crispy Chicken Legs

Perfectly seasoned and perfectly crisp.
Ingredients:
1/2 tablespoon sugar |
1 knob ginger, peeled and finely grated |
2 chicken legs, skin-on |
3 tablespoon Sriracha sauce |
2 limes, cut into wedges |
1/2 tablespoon fish sauce |
1/2 cup roughly chopped cilantro |
1/2 teaspoon fresh cracked black pepper, more for seasoning |
1 tablespoon rice vinegar |
2 cloves garlic, coarsely chopped |
3 tablespoons olive oil |
1 teaspoon kosher salt, more for seasoning |
Directions:
- Preheat oven to broil.
- Season chicken with kosher salt and cracked pepper.
- Pour oil in olive oil into a heavy skillet. Bring to high heat. Once hot, place chicken in skin side down and cook for 2 minutes. Reduce heat to medium-high and cook for an additional 12 minutes. (Chicken should be golden brown)
- While chicken is cooking, combine sugar, grated ginger, Sriracha sauce, fish sauce, 1/2 teaspoon cracked black pepper, rice vinegar, garlic, olive oil and 1 teaspoon kosher salt, in a shallow bowl.
- Once chicken is cooked, transfer to seasoning bowl. Coat evenly. Let sit in the bowl for 5-10 minutes.
- Place chicken, skin side up, in a roasting pan. Place in oven and cook for 20-25 minutes. Remove from oven, baste chicken with remaining seasoning mix and place back in oven to cook for an additional 15 minutes.
- Serve with cilantro and lime wedges.
