Mango Shrimp Tacos





Serves 4 |
These tacos are fun,fruity and flavorful.
Ingredients:
| 1 lb shrimp, peeled and deveined | 
| 1 mango, chopped | 
| 4 tablespoons lime juice | 
| 2 cloves garlic, sliced | 
| 1/4 cup chopped fresh cilantro | 
| 2 tablespoons cooking oil | 
| Salt, to taste | 
| 1 avocado, diced, for garnish | 
| Lettuce, for garnish | 
| 8 soft taco tortillas, corn or flour | 
Directions:
- Pour cooking oil in a large pan and bring to medium-high heat. Once hot, add shrimp and garlic. Season with salt. Sauté and stir for about 5 minutes. (Shrimp should be opaque)
- Add mango and cilantro to pan. Cook for about a minute. Stir in lime juice and remove pan from heat. Add salt if needed.
- Warm tortillas in the microwave and spoon equal amounts of taco filling into each tortilla. Add avocado and lettuce to tacos and enjoy.
