Easy Sweet Potato Cakes





Serves 8 |
A simple appetizer with big flavors.
Ingredients:
| 2 sweet potatoes, peeled, cut into small cubes |
| 1/4 cup vegetable oil, plus 1 tablespoon |
| 2 cloves garlic, minced |
| 3 green onions, with tops, thinly sliced |
| 1 jalapeno, seeded, finely chopped |
| 1/4 teaspoon allspice |
| 1 teaspoon brown sugar |
| Salt, to taste |
| Ground black pepper, to taste |
Directions:
- Place the sweet potatoes in a pot, and fill with enough water to cover.
- Bring to a boil and cook until the potatoes for about 10 minutes. Drain and transfer sweet potatoes to a mixing bowl and mash.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Stir in the garlic, green onions and the jalapeno. Cook for about 5 minutes, stirring occasionally.
- Add the vegetable mix, allspice and brown sugar into the mashed sweet potatoes. Season to taste with salt and pepper. Mix together well.
- Form the sweet potato mixture into 8 balls and slightly flatten to form cakes.
- Pour the remaining vegetable oil into the same skillet, bring to medium-high heat. Place a few of the sweet potato cakes into the skillet and cook until golden brown, flip and repeat until golden brown.
