Apple Cinnamon Walnut Oatmeal Cookies





Serves 24 |
Homemade cookies don't get much tastier.
Ingredients:
| 2 teaspoons ground cinnamon |
| 3 cups old-fashioned oats |
| 1 1/2 cups flour |
| 1 teaspoon baking soda |
| 1 teaspoon salt |
| 3/4 cup unsalted butter |
| 1 cup dark brown sugar |
| 1/2 cup sugar |
| 1 egg |
| 2 teaspoons pure vanilla extract |
| 1/2 cup cinnamon applesauce |
| 1 red apple, peeled, cored, and diced |
| 1 cup chopped walnuts |
Directions:
- Preheat oven to 375° F. Line two cookie sheets with parchment paper.
- Combine cinnamon, oats, flour, baking soda and salt in a mixing bowl. Set aside.
- Using hand mixer, cream butter, both sugars together until light and fluffy. Add in egg and vanilla extract, mix until well incorporated. Add applesauce and mix for about a minute. Add oats and gradually mix until incorporated.
- Stir in diced apple, chopped walnuts.
- Scoop out dough and place on cookie sheets. Place in oven and bake for about 13 minutes, until golden.
