Cranberry Orange Butter Scones

Serves 16 | 

A sweet and slightly tart treat.

Ingredients:

1 1/2 cups butter
2 tablespoons confectioners sugar
1/2 cup frozen cranberries, minced
1/2 teaspoon orange zest
2 1/2 cups flour
2/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup chopped fresh cranberries
3/4 cup buttermilk
3/4 cup butter

Directions:

  1. In a mixing bowl, whisk the butter until smooth and fluffy. Stir in confectioners sugar, cranberries and orange zest, mix together well. Cover and refrigerate for at least 1 hour.
  2. Preheat oven to 400° F.
  3. Mix together flour, sugar, baking powder and baking soda in a mixing bowl until crumbly. Add in chopped cranberries and stir. Pour in buttermilk and stir just until moistened.
  4. Place mixture onto a lightly floured surface and knead for 2 minutes. Divide mix in half and roll each into two balls. Gently press balls down to compress slightly and cut each ball into eight wedges.
  5. Arrange wedges on two baking sheets. Bake for 15-18 minutes, until lightly browned.
  6. Remove from oven and transfer to wire racks to cool for a few minutes.
  7. Serve with the cranberry-orange butter and enjoy!
