Strawberry Rhubarb Tart





Serves 8 |
A classic dessert that's great for any occasion.
Ingredients:
1 cup fresh rhubarb, cubed |
1/2 cup sugar |
1 sheet pastry dough |
1 lb strawberries, halved |
1/4 cup red currant jelly |
Directions:
- Preheat oven to 425° F.
- Pour sugar and rhubarb pieces into a saucepan, bring to medium heat and cook for about 5 minutes, stirring often. Remove from stovetop and let cool.
- Place pastry dough in a 9" tart pan, pressing the pastry against the edges. Remove excess dough. Place crust in the oven to bake for 8-10 minutes, until a light golden brown.
- Pour the rhubarb into the crust and arrange strawberries on top. Place back in the oven to bake for another 10 minutes.
- Remove tart from the oven. Pour the currant jelly over top and enjoy!
