Buffalo-style Chicken Penne Pasta





Serves 4 |
A spicy and delicious take on the original.
Ingredients:
1 lb penne pasta |
1 lb chicken breasts, diced |
1 1/2 teaspoons salt |
1 1/2 teaspoons ground black pepper |
1 1/2 teaspoons garlic powder |
1 1/2 teaspoons paprika |
2 tablespoons olive oil |
1 cup chopped celery |
3 tablespoons hot sauce |
1 cup mayonnaise |
1/2 cup ranch dressing |
3/4 cup milk |
1/2 cup blue cheese |
Directions:
- Follow package directions to cook pasta. Drain water and return pasta to pot.
- Evenly season the chicken with salt, pepper, garlic powder and paprika.
- Heat 1 tablespoon of olive oil in skillet over medium-high heat. Once skillet is hot, place chicken in and cook until no longer pink.
- Add 2 tablespoons of hot sauce and cook for an additional minute. Remove chicken from skillet.
- Pour the remaining olive oil into the skillet. Add celery and cook for about 2 minutes. Turn off heat and return the chicken to the skillet.
- Combine the mayonnaise, ranch dressing, milk and the remaining hot sauce in a small bowl. Stir until thoroughly mixed.
- Pour the sauce into the skillet covering the chicken and celery. Bring to medium heat and cook until sauce is hot.
- Add the cooked pasta to the skillet and toss to combine.
- Transfer to serving plates, top with blue cheese and enjoy!
