Chicken Bolognese





Serves 6 |
A yummy new take on the classic dish.
Ingredients:
1 1/2 tablespoons extra virgin olive oil |
1 yellow onion, finely chopped |
2 stalks celery, finely chopped |
1 carrot, finely chopped |
3 cloves garlic, finely chopped |
1/2 teaspoon red chili flakes |
1 1/2 lb ground chicken |
1 1/2 cups whole milk |
1 can crushed tomatoes, 28 oz. |
1 tablespoon chopped parsley |
1 tablespoon chopped fresh oregano |
Kosher salt, to taste |
Ground black pepper, to taste |
3 lb farfalle pasta |
Shaved Parmesan cheese, for garnish |
Directions:
- Heat olive oil in a large pot over medium heat. Add in yellow onion, celery, carrot, garlic and chili flakes. Saute for 8-10 minutes, until the vegetables begin to caramelize.
- Add ground chicken. Cook chicken until thoroughly done. Pour whole milk into the pot and simmer over low heat, stirring occasionally, until the milk has almost completely evaporated. Stir in the tomatoes, and continue to simmer for about 1 hour. Season with salt and pepper.
- Cook pasta according to package directions. Transfer pasta to serving plates.
- Pour chicken and sauce over pasta, add parsley and oregano. Top with parmesan cheese.
