Mushroom, Leek and Broccoli Frittata





Serves 4 |
Filled with wholesome ingredients.
Ingredients:
2 teaspoon olive oil |
1 teaspoon butter |
3/4 cup finely chopped broccoli florets |
1/2 cup chopped mushrooms |
1/2 cup chopped leeks |
5 eggs |
6 egg whites |
1 cup shredded aged cheddar cheese |
1/4 teaspoon salt |
1/2 teaspoon ground black pepper |
Directions:
- Preheat oven to broil.
- Heat a 9-inch oven safe skillet over medium heat. Add the olive oil and butter and heat for 30 seconds. Add the broccoli, mushrooms and leeks, saute for about 4 minutes. Remove from heat.
- In a medium bowl, whisk together the eggs and egg whites. Stir in the shredded cheese, and season with salt and pepper. Add the egg mixture to the skillet. Stir together.
- Turn heat to medium-low and cook for about 3 minutes, until eggs begin to set.
- Place the skillet under the broiler for about 3 minutes, until the top is set and golden brown.
- Remove from oven and let sit for 2 minutes before serving.
