Mushroom and Gouda Cheese Quesadillas

Serves 4 | 

A wholly unique qiesadilla.

Ingredients:

3 tablespoons olive oil
8 oz sliced mushrooms
Salt, to taste
Ground black pepper, to taste
2 burrito-size tortillas
2 cups fromage cheese
2 cups shredded smoked gouda
2 green onions, chopped

Directions:

  1. Pour 2 tablespoons of olive oil into a pan, bring to medium heat. Add mushrooms and season with salt and pepper. Cook for about 5 minutes, until soft. Remove from heat and set aside.
  2. Spread half of the fromage on one tortilla, sprinkle half of the gouda over the fromage. Top with half of the mushrooms and sprinkle half of the chopped green onion over mushrooms. Fold over the tortilla and press down. Repeat process to make the second quesadilla.
  3. Pour 1 tablespoon oil into a large skillet and bring to medium heat. Place the two quesadillas into the skillet and place a pan over top to press down. Cook quesadillas until lightly browned and flip.
  4. Transfer quesadillas to serving plates, cut in half and enjoy!
