Beef and Rice Lettuce Wraps





Serves 8 |
An easy appetizer that's big on taste.
Ingredients:
1 lb ground beef |
1/2 cup beef broth |
1/4 cup chopped green onions |
3 tablespoons chili paste |
2 tablespoons chopped fresh ginger |
2 tablespoons sugar |
1 cup cooked white rice |
8 romaine lettuce leaves |
Directions:
- In a large nonstick skillet, cook beef over medium heat until browned. Drain off liquids.
- Add beef broth, green onions, chili paste, ginger and sugar tp the skillet. Reduce heat to low. Cook for about 5 minutes, stirring occasionally.
- Add rice and stir together. Cook for an additional 5 minutes, stirring occasionally.
- Fill a large pot with water and bring to a boil. Drop lettuce leaves into the pot and cook for about 2 minutes, until tender.
- Fill a large bowl with cold water. Place lettuce in the bowl of cold water. Pat dry with paper towels.
- Spoon filling into the center of each piece of lettuce. Fold edges over filling, roll up tightly and enjoy!
