Turkish Eggs





Serves 2 |
A delectable way to begin the day.
Ingredients:
3 dill fronds |
1/2 clove garlic |
8 mint leaves |
1 cup Greek yogurt |
Salt, to taste |
Ground black pepper, to taste |
Water, for boiling |
1 tablespoon vinegar |
2 eggs |
1/2 stick unsalted butter |
1/2 teaspoon smoked paprika |
1 teaspoon chili flakes |
Directions:
- Finely chop the dill, garlic and mint. Transfer from the cutting board to a mixing bowl. Pour Greek yogurt into the bowl, season with salt and pepper, and stir together. Set aside.
- Pour water into a deep pot and bring to a boil. Pour vinegar into the pot and then crack one egg over the water. Cook for 3-minutes. Use a slotted spoon to gently remove the egg. Place on a plate and cook the second egg for 3-minutes, then transfer to the plate. Set aside.
- Add the butter to a saucepan and melted over medium heat. Once butter has melted, add paprika and stir until well combined.
- Separate the Greek yogurt mix in half and spoon each half onto a serving plate. Place a cooked egg in the center of each Greek yogurt. Drizzle the seasoned butter over the eggs and sprinkle the chili flakes over top.
