Cranberry Chocolate Chip Oatmeal Cookies

Serves 30 | 

Perfectly sweet with a hint of tart.

Ingredients:

3/4 cup flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 cups old fashioned rolled oats
1/2 cup unsalted butter
1/2 cup packed brown sugar
1/2 cup sugar
1 egg
1 teaspoon pure vanilla extract
1/2 cup chocolate chips
1/2 cup dried cranberries

Directions:

  1. Preheat your oven to 350° F. Line two baking sheets with parchment paper.
  2. Combine the flour, salt, baking soda, baking powder and rolled oats in a mixing bowl. Stir together until well incorporated. Set aside
  3. In a separate mixing bowl, combine the butter, brown sugar and regular sugar. Use an electric mixer to beat until fully blended and fluffy.
  4. Add in the egg and vanilla extract to the butter sugar mixture. Beat until well blended.
  5. Slowly pour the flour mixture into the sugar butter mixture and beat until fully incorporated.
  6. Add the chocolate chips and dried cranberries to the batter and stir together with a spoon.
  7. Use a spoon to scoop out cookie batter and arrange on baking sheets.
  8. Place the baking sheets into the oven to bake for 10-12 minutes, until the edges and bottoms are lightly browned.
  9. Remove the baking sheets from the oven. Transfer cookies to racks to cool.
