Cranberry Chocolate Chip Oatmeal Cookies





Serves 30 |
Perfectly sweet with a hint of tart.
Ingredients:
3/4 cup flour |
1/4 teaspoon salt |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
2 cups old fashioned rolled oats |
1/2 cup unsalted butter |
1/2 cup packed brown sugar |
1/2 cup sugar |
1 egg |
1 teaspoon pure vanilla extract |
1/2 cup chocolate chips |
1/2 cup dried cranberries |
Directions:
- Preheat your oven to 350° F. Line two baking sheets with parchment paper.
- Combine the flour, salt, baking soda, baking powder and rolled oats in a mixing bowl. Stir together until well incorporated. Set aside
- In a separate mixing bowl, combine the butter, brown sugar and regular sugar. Use an electric mixer to beat until fully blended and fluffy.
- Add in the egg and vanilla extract to the butter sugar mixture. Beat until well blended.
- Slowly pour the flour mixture into the sugar butter mixture and beat until fully incorporated.
- Add the chocolate chips and dried cranberries to the batter and stir together with a spoon.
- Use a spoon to scoop out cookie batter and arrange on baking sheets.
- Place the baking sheets into the oven to bake for 10-12 minutes, until the edges and bottoms are lightly browned.
- Remove the baking sheets from the oven. Transfer cookies to racks to cool.
