Spinach Puff Pastry Boats

The real go-to party appetizer.

Ingredients:

2 tablespoons butter
1 clove garlic, finely diced
2 tablespoons shallot, finely diced
2 tablespoons flour
1 1/2 cups heavy cream
1/4 teaspoon ground nutmeg
1/4 cup parmesan shredded
1/2 cup shredded white cheddar cheese
6 strips bacon, cooked and diced
16 oz frozen spinach, thawed
3 sheets puff pastry
1 egg
1 tablespoon water

Directions:

  1. Preheat oven to 400° F. Grease a muffin pan with cooking spray.
  2. Melt butter in a skillet over medium heat. Add shallots and garlic to the skillet and cook 3 minutes, stirring frequently. Sprinkle flour into the skillet and whisk for 2 minutes, until lightly browned. Slowly pour in heavy cream and nutmeg, whisking for 3 minutes. Stir in the parmesan and white cheddar. Add 3/4 of the diced bacon and stir until the cheese melts. Add the spinach to the skillet and stir together.
  3. Remove the skillet from the heat.
  4. On a lightly floured surface, unfold the thawed puff pastry and roll each into a 12-inch square sheet. Cut each pastry sheet into 9 squares. Place the pastry squares into muffin the cups, pressing gently on the bottoms and up the sides, with the corners pointing up. Fill each pastry with 2 tablespoons of the creamed spinach mixture. Top with remaining chopped bacon.
  5. In a small bowl, mix egg and water to create an egg wash. Brush the egg wash over the top of the puff pastries, and place into the oven. Bake for 15-18 minutes, until golden brown on top.
  6. Remove from oven, let cool slightly then serve and enjoy!
