Easy Peach Cobbler

Serves 4 |
A welcome summer dessert.
Ingredients:
6 peaches, cut into thin wedges |
1 tablespoon fresh lemon juice |
1 teaspoon cornstarch |
1/4 cup sugar |
For Topping |
1 cup flour |
1 teaspoon baking powder |
1/2 cup sugar |
1/2 teaspoon salt |
3/4 stick unsalted butter, cut into small pieces |
1/4 cup boiling water |
Directions:
- Preheat oven to 425° F.
- Place peaches in a 2-quart non-reactive baking dish. Drizzle with lemon juice and sprinkle with cornstarch and sugar; toss to combine. Bake in the middle of the oven for 10 minutes.
- While peaches are baking, combine flour, baking powder, sugar and salt. Add butter to flour mixture then blend in with a pastry blender or your fingertips until mixture resembles coarse meal. Add water, stirring, until just combined.
- Carefully remove baking dish from oven and drop spoonfuls of topping over peaches. Bake in the middle of the oven for about 25 minutes, until topping is golden. Note: As it bakes, the topping will spread.
