Pepperoni and Sausage Nachos

Italian flavors meet cheesy goodness.

Ingredients:

1 tablespoon olive oil
2 cups sweet bell peppers, sliced
1 cup mushrooms, sliced
1 yellow onion, thinly sliced
2 cloves garlic, crushed
1 lb Italian sausage, casings removed
1/2 cup pepperoni, sliced
1 bag tortilla chips, 12 oz.
1 cup Italian cheese blend, shredded
2 Roma tomatoes, diced
Hot pepper flakes, for topping

Directions:

  1. Preheat oven to 350° F. Line a baking sheet with aluminum foil.
  2. Drizzle the olive oil in a large saute pan. Bring to medium heat. Add the bell pepper, mushrooms, and yellow onion. Saute until the onions become translucent.
  3. Then add the garlic and Italian sausage. Cook until the sausage is browned, breaking apart while cooking. Remove from heat.
  4. Arrange the tortilla chips over the baking sheet. Scatter the sausage mix evenly over the chips. Sprinkle the shredded cheese over top and place the pepperoni on the cheese.
  5. Place the baking sheet into the oven. Bake for about 10 minutes, until the cheese is melted.
  6. Remove the baking sheet from the oven. Top with diced tomatoes and hot pepper flakes.
