Pepperoni and Sausage Nachos





Serves 6 |
Italian flavors meet cheesy goodness.
Ingredients:
| 1 tablespoon olive oil |
| 2 cups sweet bell peppers, sliced |
| 1 cup mushrooms, sliced |
| 1 yellow onion, thinly sliced |
| 2 cloves garlic, crushed |
| 1 lb Italian sausage, casings removed |
| 1/2 cup pepperoni, sliced |
| 1 bag tortilla chips, 12 oz. |
| 1 cup Italian cheese blend, shredded |
| 2 Roma tomatoes, diced |
| Hot pepper flakes, for topping |
Directions:
- Preheat oven to 350° F. Line a baking sheet with aluminum foil.
- Drizzle the olive oil in a large saute pan. Bring to medium heat. Add the bell pepper, mushrooms, and yellow onion. Saute until the onions become translucent.
- Then add the garlic and Italian sausage. Cook until the sausage is browned, breaking apart while cooking. Remove from heat.
- Arrange the tortilla chips over the baking sheet. Scatter the sausage mix evenly over the chips. Sprinkle the shredded cheese over top and place the pepperoni on the cheese.
- Place the baking sheet into the oven. Bake for about 10 minutes, until the cheese is melted.
- Remove the baking sheet from the oven. Top with diced tomatoes and hot pepper flakes.
