Hatch Chile Stuffed Chicken Breast





Serves 2 |
Creamy and savory with a hint of heat.
Ingredients:
| 2 boneless, skinless chicken breasts |
| 4 oz cream cheese |
| 1/2 cup grated sharp cheddar cheese |
| 1 lb roasted chopped hatch chiles |
| Salt, to taste |
| Ground black pepper, to taste |
| Ground chipotle powder |
| 1 tablespoon unsalted butter |
Directions:
- Preheat the oven to 425° F.
- Cut a horizontal pocket in the center of both chicken breasts.
- Combine the cream cheese, cheddar, and hatch chiles in a mixing bowl. Stir together until well combined. Season with salt and pepper, stir together.
- Fill each chicken breast with the cream cheese mixture.
- Season the top of the chicken breasts with salt, pepper and chipotle powder.
- Place the butter in a skillet and bring to medium-high heat.
- Once the butter has melted, place the chicken seasoned side down in and sear for 4-5 minutes, until golden brown. Season the chicken with salt, pepper and chipotle powder, in the pan, before flipping. Cook the other side for 4-5 minutes, until golden brown.
- Transfer the skillet to the oven. Bake for 10 minutes.
- Remove the skillet from the oven and let the chicken sit in the skillet for 5 minutes.
