Beef and Quinoa BBQ Meatloaf Muffins

Wonderfully delicious and so easy to make.
Ingredients:
2 lb extra lean ground beef |
1 cup cooked quinoa |
1 egg |
1/2 teaspoon salt |
1/2 teaspoon pepper |
2 cloves garlic, minced |
1/4 cup grated onion |
1 teaspoon Italian seasoning |
1/4 cup finely chopped fresh parsley |
1/2 cup freshly grated parmesan cheese |
1/2 cup barbecue sauce, your preference |
Directions:
- Preheat oven to 425° F. Line two muffin tins with muffin liners, for 18 total.
- Thoroughly mix the ground beef, quinoa, egg, salt, pepper, garlic, onion, Italian seasoning, parsley, parmesan cheese, and 1/4 cup of barbecue sauce in a large bowl.
- Divide the meatloaf mixture among the 18 muffin liners. Spread the remaining 1/4 cup of barbecue sauce over the tops of each meatloaf muffin.
- Place the muffin tins in the oven to bake for 25-30 minutes.
- Remove the tins from the oven. Allow meatloaf muffins to rest until cool enough to remove from the tins.
- Separate the meatloaf muffins
