Beef and Quinoa BBQ Meatloaf Muffins

Wonderfully delicious and so easy to make.

Ingredients:

2 lb extra lean ground beef
1 cup cooked quinoa
1 egg
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, minced
1/4 cup grated onion
1 teaspoon Italian seasoning
1/4 cup finely chopped fresh parsley
1/2 cup freshly grated parmesan cheese
1/2 cup barbecue sauce, your preference

Directions:

  1. Preheat oven to 425° F. Line two muffin tins with muffin liners, for 18 total.
  2. Thoroughly mix the ground beef, quinoa, egg, salt, pepper, garlic, onion, Italian seasoning, parsley, parmesan cheese, and 1/4 cup of barbecue sauce in a large bowl.
  3. Divide the meatloaf mixture among the 18 muffin liners. Spread the remaining 1/4 cup of barbecue sauce over the tops of each meatloaf muffin.
  4. Place the muffin tins in the oven to bake for 25-30 minutes.
  5. Remove the tins from the oven. Allow meatloaf muffins to rest until cool enough to remove from the tins.
  6. Separate the meatloaf muffins
