Balsamic Chicken Goat Cheese Wraps

Perfect for lunch on-the-go.

Ingredients:

3 boneless skinless chicken breasts
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 tablespoon whole-grain mustard
1/4 cup balsamic vinegar
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon canola oil
4 burrito-size tortillas
1 cup arugula
1/2 cup crumbled goat cheese
1/2 cup chopped pecans
1/2 cup dried cranberries
1/4 cup balsamic glaze

Directions:

  1. Combine the chicken, salt, pepper, whole grain mustard, balsamic vinegar, honey, and garlic, in a mixing bowl. Toss until the chicken is evenly coated. Cover and let sit for 10 minutes.
  2. Bring a large skillet to medium-high heat. Drizzle in the canola oil. Place the chicken in the skillet and cook for 5-7 minutes per side.
  3. Transfer the chicken to a cutting board. Cut the chicken into thin slices.
  4. Add an equal amount of the arugula to each tortilla. Then top the arugula with chicken, goat cheese, pecans, and cranberries. Drizzle the balsamic glaze over top.
  5. Tuck in one side of each tortilla, then roll up. Enjoy!
