Balsamic Chicken Goat Cheese Wraps





Serves 4 |
Perfect for lunch on-the-go.
Ingredients:
3 boneless skinless chicken breasts |
1/4 teaspoon kosher salt |
1/4 teaspoon ground black pepper |
1 tablespoon whole-grain mustard |
1/4 cup balsamic vinegar |
2 tablespoons honey |
3 cloves garlic, minced |
1 tablespoon canola oil |
4 burrito-size tortillas |
1 cup arugula |
1/2 cup crumbled goat cheese |
1/2 cup chopped pecans |
1/2 cup dried cranberries |
1/4 cup balsamic glaze |
Directions:
- Combine the chicken, salt, pepper, whole grain mustard, balsamic vinegar, honey, and garlic, in a mixing bowl. Toss until the chicken is evenly coated. Cover and let sit for 10 minutes.
- Bring a large skillet to medium-high heat. Drizzle in the canola oil. Place the chicken in the skillet and cook for 5-7 minutes per side.
- Transfer the chicken to a cutting board. Cut the chicken into thin slices.
- Add an equal amount of the arugula to each tortilla. Then top the arugula with chicken, goat cheese, pecans, and cranberries. Drizzle the balsamic glaze over top.
- Tuck in one side of each tortilla, then roll up. Enjoy!
