Black Pepper Chicken with Mushrooms





Serves 4 |
Quick, easy, and remarkably delicious.
Ingredients:
2 boneless, skinless chicken breasts, thinly sliced |
Salt, to taste |
Black pepper, to taste |
1 tablespoon cornstarch |
2 tablespoons canola oil |
1 green bell pepper, sliced |
1 yellow onion, sliced |
3 cloves garlic, minced |
8 oz sliced button mushrooms |
1 teaspoon honey |
1 tablespoon soy sauce |
1/2 teaspoon rice vinegar |
1 tablespoon oyster sauce |
2 green onions, chopped, for garnish |
Directions:
- Place the sliced chicken in a mixing bowl. Season with salt and pepper, then pour the cornstarch over top. Toss until evenly coated.
- Pour 1 tablespoon of canola oil into a large skillet. Bring to medium-high heat. Add the chicken and stir-fry for about 5 minutes, until browned. Transfer the chicken to a plate.
- Pour the remaining canola oil into the same skillet. Stir-fry the bell pepper and onion for 3 minutes. Then add the garlic and mushrooms, cook for an additional 3 minutes.
- Whisk together honey, soy sauce, rice vinegar, and oyster sauce in a small bowl.
- Pour the honey sauce over the vegetables. Return the chicken to the skillet. Toss until well-coated. Cook and stir for 2 minutes.
- Transfer the chicken and vegetables to serving plates. Garnish with green onions. Enjoy!
