Grilled Chicken and Broccoli Bowls with a Creamy Garlic Sauce

Great for busy nights and meal prepping.

Ingredients:

2 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
2 cups broccoli florets
1 tablespoon lemon juice
1 cup rice
3 cloves garlic, minced
1/2 cup heavy cream
2 tablespoons butter

Directions:

  1. Drizzle the chicken breasts with 1 tablespoon of olive oil. Sprinkle with salt and pepper. Bring a grill pan or skillet to medium-high heat. Cook the chicken breasts until cooked through and lightly charred, flipping once. Remove from the heat. Slice into strips. Set aside.
  2. Preheat the oven to 400°F.
  3. Place the broccoli in a mixing bowl. Drizzle the remaining 1 tablespoon of olive oil over the broccoli. Then spritz with the lemon juice and season with a pinch of salt. Toss to coat. Spread the broccoli on a baking sheet. Place in the oven to roast for 15-20 minutes, until crisp-tender.
  4. Cook the rice in a rice cooker or on the stovetop. Remove from heat and fluff occasionally.
  5. Melt the butter in a saucepan over medium heat. Then add the minced garlic, saute until fragrant. Stir in the heavy cream and season with salt and pepper, and simmer until the cream is thickened.
  6. Add the rice, chicken, and broccoli to serving bowls. Drizzle with the garlic sauce and enjoy!
