Chipotle Honey Chicken Thighs With Smoked Gouda Mashed Potatoes





Serves 4 |
The pinnacle of comfort food.
Ingredients:
| 4 bone-in chicken thighs |
| 1/4 cup honey |
| 2 tablespoons Chipotle chili powder |
| 1/2 teaspoon black pepper |
| 1 teaspoon salt |
| 1 teaspoon garlic powder |
| 1 tablespoon olive oil |
| 2 lb russet potatoes, peeled and cubed |
| 1 cup milk |
| 4 tablespoons unsalted butter |
| 4 oz shredded smoked Gouda cheese |
Directions:
- Preheat the oven to 400°F.
- In a large mixing bowl, combine the honey, chili powder, black pepper, salt, garlic powder, and olive oil. Place the chicken thighs in the marinade and coat well. Allow the chicken to marinate for at least 15 minutes.
- Place the potatoes in a large pot and cover with water. Bring to a boil over medium-high heat, then cook for 15-20 minutes, until fork-tender. Drain the water.
- Add the milk, butter, and Gouda to the pot. Mash until smooth and creamy. Keep warm on low heat, stirring periodically, until ready to serve.
- Place the marinated chicken thighs skin-side up in a baking dish. Place in the oven to bake for 25-30 minutes, until the skin is crispy.
- Transfer the chicken thighs to serving plates. Spoon the mashed potatoes alongside the chicken. Enjoy!
