Seafood makes any meal feel like a special occasion.
Ingredients:
Cooking spray |
1/2 cup chopped onions |
1 cup uncooked orzo |
1/4 teaspoon dried thyme |
1 cup vegetable broth |
1/2 cup dry white wine |
2 tablespoons chopped fresh chives |
2 tablespoons fresh lemon juice |
1 1/2 pounds sea scallops |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
2 teaspoons olive oil |

- Sprinkle scallops with salt and pepper. Heat oil in a large cast-iron skillet over medium-high heat. Add scallops; cook 3 minutes per side or until desired degree of doneness is reached.
