Hatch Chile Chocolate Chip Cookies





Serves 36 |
This dessert is unlike anything you’ve tried before.
Ingredients:
2 hatch chiles, stemmed, peeled, seeded, roasted and chopped |
1 cup packed brown sugar |
3 cups flour |
2 cups semisweet chocolate chips |
2 sticks unsalted butter |
2 teaspoons vanilla extract |
1 cup sugar |
1 teaspoon baking soda |
2 eggs |
1/2 teaspoon salt |
Directions:
- Preheat oven to 350° F. Cover a cookie sheet, or two, with parchment paper.
- Place brown sugar, white sugar and butter in a mixing bowl. Use a handheld blender to cream butter and sugars together. Add one egg to mixture and blend until well mixed. Then add second egg and mix together well. Add vanilla extract to mixture and mix well. Set aside hand blender.
- Use a large spoon to stir in flour, baking soda and salt. After well mixed, add chiles and chocolate chips. Mix well.
- Spoon a good amount of cookie dough onto cookie sheet(s). Place cookie sheet in oven and bake for 10-12 minutes. Remove from oven and transfer to wire rack to cool.
