Mole-Style Pork Chops

Serves 4 |
Just the right amount of sweet and savory.
Ingredients:
1 teaspoon unsweetened cocoa powder |
1 teaspoon ground chipotle chile peppers |
1 teaspoon ground cumin |
1 teaspoon smoked paprika |
3 teaspoons brown sugar |
1/2 teaspoon salt |
4 bone-in center-cut pork chops |
Directions:
- Heat a grill pan over medium heat.
- In a small bowl, combine cocoa powder, chipotle chile peppers, cumin, paprika, sugar and salt. Rub mixture onto both sides of pork chops then lightly spray chops with cooking spray.
- Place chops on grill pan, cover and cook about 3 minutes per side or until done. Allow chops to sit for a few of minutes before serving.
