Pan-Seared Chipotle Lime Chicken





Serves 4 |
The right amount of savory, sweet and tangy.
Ingredients:
| 4 boneless skinless chicken breasts |
| 3 tablespoons olive oil |
| 3 tablespoons Southwest seasoning blend |
| 2 chipotle chilies in adobo sauce, minced, plus 1 tablespoon adobo sauce |
| 3 tablespoons fresh lime juice |
| 2 cloves garlic, minced |
| 1/2 cup olive oil |
| 2 tablespoons honey |
Directions:
- Place chicken breasts in a resealable bag. Pour 2 tablespoons of olive oil and Southwest seasoning over the chicken and coat evenly.
- In a small bowl, whisk together minced chipotles, adobo sauce, lime juice, minced garlic and remaining olive oil. Divide the marinade in half.
- Pour half into the re-sealable bag and coat the chicken. Place in fridge and allow to marinate for at least 20 minutes.
- Whisk honey into reserved marinade. Set aside.
- Preheat a skillet to medium-high heat. Remove the chicken from bag and place into the skillet. Cook chicken for 4 minutes per side.
- Baste chicken with the honey-chipotle mix on one side and cook for 2 more minutes, flip and baste the chicken, cook for 2 minutes.
- Transfer chicken to serving plates and pour any remaining honey sauce over the chicken and enjoy!
