Red Plum Compote





Serves 2 cups |
A sweet addition to breakfast.
Ingredients:
10 red plums |
4 tablespoons honey |
2 tablespoons lemon juice |
1 teaspoon pure vanilla extract |
1/4 teaspoon salt |
Directions:
- Cut plums in half and remove the pits. Chop plums into chunks, reserve the juices.
- Transfer the chopped plums and the juices to a saucepan.
- Add the honey, lemon juice, vanilla extract and salt to the saucepan. Stir together well.
- Bring the saucepan to a boil on medium-high heat. Cook for 30-45 minutes, stirring often.
- Reduce heat to low, cover and cook for an additional 15 minutes, stirring every 5 minutes.
- Remove the saucepan from the heat and let cool.
- Pour the plum compote into a resealable container and enjoy!
