Chocolate Chip Cherry Muffins

Serves 18 | 

The perfect balance of rich and sweet.

Ingredients:

1/2 cup cocoa powder
2 2/3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
8 tablespoons unsalted butter, cubed
1/2 cup brown sugar
1/2 cup sugar
2 eggs
2 teaspoons vanilla extract
1 3/4 cups plain Greek yogurt
1 1/4 cups chocolate chips
1 1/4 cups fresh cherries, pitted and chopped

Directions:

  1. Preheat oven to 375° F. Line two muffin tins with 18 paper liners.
  2. In a large mixing bowl, combine the cocoa powder, flour, salt, baking soda and baking powder. Set aside.
  3. Place the butter, brown sugar and sugar into the bowl of an electric mixer. Set to medium speed and cream the butter for about 3 minutes, until fluffy.
  4. Add one egg at a time to the mixture and then vanilla extract. Mix until well combined.
  5. Reduce the speed to low. Alternate between adding some of the flour mixture and Greek yogurt until well incorporated.
  6. Remove bowl from mixer, gently fold in the chocolate chips and cherries with a spatula.
  7. Spoon an equal amount of the batter into the 18 paper liners. Place the muffin tins into the oven and bake for 15-20 minutes, until golden brown.
  8. Remove from the oven and let cool for 5 minutes before removing from the tins.
