Chocolate Chip Cherry Muffins





Serves 18 |
The perfect balance of rich and sweet.
Ingredients:
1/2 cup cocoa powder |
2 2/3 cups flour |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
2 teaspoons baking powder |
8 tablespoons unsalted butter, cubed |
1/2 cup brown sugar |
1/2 cup sugar |
2 eggs |
2 teaspoons vanilla extract |
1 3/4 cups plain Greek yogurt |
1 1/4 cups chocolate chips |
1 1/4 cups fresh cherries, pitted and chopped |
Directions:
- Preheat oven to 375° F. Line two muffin tins with 18 paper liners.
- In a large mixing bowl, combine the cocoa powder, flour, salt, baking soda and baking powder. Set aside.
- Place the butter, brown sugar and sugar into the bowl of an electric mixer. Set to medium speed and cream the butter for about 3 minutes, until fluffy.
- Add one egg at a time to the mixture and then vanilla extract. Mix until well combined.
- Reduce the speed to low. Alternate between adding some of the flour mixture and Greek yogurt until well incorporated.
- Remove bowl from mixer, gently fold in the chocolate chips and cherries with a spatula.
- Spoon an equal amount of the batter into the 18 paper liners. Place the muffin tins into the oven and bake for 15-20 minutes, until golden brown.
- Remove from the oven and let cool for 5 minutes before removing from the tins.
