Easy Peanut Noodles

Simple, quick and undeniably delicious.
Ingredients:
1 box fettuccine noodles, 16 oz. |
1 cup peanut butter |
1/4 cup brown sugar |
3 cloves garlic, grated |
1 tablespoon grated ginger root |
1/4 cup soy sauce |
2 tablespoon fresh lime juice |
2 tablespoon rice vinegar |
2 teaspoons chili garlic sauce |
1 tablespoon sesame seeds, for garnish |
3 green onions, sliced, for garnish |
1/4 cup chopped peanuts, for garnish |
Directions:
- Cook the fettuccine noodles according to package instructions. Reserve 1 cup of pasta water when draining. Set aside the reserved water.
- Add the peanut butter, brown sugar, garlic, ginger root, soy sauce, lime juice, rice vinegar and chili garlic sauce in a mixing bowl. Stir together until well mixed.
- Add the noodles to the mixing bowl with the peanut sauce. Add a small amount of the reserved pasta water and stir together. Add a little more water until the desired consistency is reached.
- Spoon peanut noodles onto serving plates. Garnish with sesame seeds, green onions and chopped peanuts.
