Chicken Zucchini Bake

Serves 4 | 

Wholesome, delicious, and so easy to prepare.

Ingredients:

1 teaspoon sea salt
1/4 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon cumin
2 tablespoons extra virgin olive oil
1 lb boneless skinless chicken breast, chopped
1 yellow onion, chopped
1 zucchini, chopped

Directions:

  1. Combine the sea salt, black pepper, smoked paprika, oregano and cumin in a mixing bowl. Drizzle the olive oil over the spice mixture and stir together to make a marinade.
  2. Add the chicken, yellow onion, and zucchini to the mixing bowl. Coat evenly with the marinade, cover with a lid or aluminum foil and place in the refrigerator overnight.
  3. Preheat the oven to 425° F.
  4. Transfer the chicken and vegetables to a large baking dish. Place the dish into the oven and bake uncovered for 30 minutes.
  5. Spoon onto serving plates while hot and enjoy!
