Chicken Zucchini Bake





Serves 4 |
Wholesome, delicious, and so easy to prepare.
Ingredients:
1 teaspoon sea salt |
1/4 teaspoon ground black pepper |
1 teaspoon garlic powder |
1 teaspoon smoked paprika |
1 teaspoon dried oregano |
1 teaspoon cumin |
2 tablespoons extra virgin olive oil |
1 lb boneless skinless chicken breast, chopped |
1 yellow onion, chopped |
1 zucchini, chopped |
Directions:
- Combine the sea salt, black pepper, smoked paprika, oregano and cumin in a mixing bowl. Drizzle the olive oil over the spice mixture and stir together to make a marinade.
- Add the chicken, yellow onion, and zucchini to the mixing bowl. Coat evenly with the marinade, cover with a lid or aluminum foil and place in the refrigerator overnight.
- Preheat the oven to 425° F.
- Transfer the chicken and vegetables to a large baking dish. Place the dish into the oven and bake uncovered for 30 minutes.
- Spoon onto serving plates while hot and enjoy!
