Honey BBQ Salmon Tacos with Mango Slaw

Serves 4 |
Deliciously healthy and surprisingly easy.
Ingredients:
1 lb salmon fillet, quartered |
1 clove garlic, minced |
1 tablespoon soy sauce |
1/4 cup tomato paste |
2 tablespoons apple cider vinegar |
2 tablespoons honey |
2 teaspoons smoked paprika |
3 cups shredded purple cabbage |
2 mangos, pitted, peeled and cut into strips |
2 tablespoons lime juice |
1 bunch cilantro, chopped |
1/2 teaspoon salt |
Corn tortillas, for serving |
Directions:
- Thoroughly stir together the garlic, soy sauce, tomato paste, apple cider vinegar, honey and smoked paprika in a mixing bowl.
- Place the salmon in a resealable container. Pour the marinade over the salmon. Cover and place in the refrigerator to marinate for 1 hour.
- Preheat the oven to 400° F. Line a sheet pan with aluminum foil.
- Transfer the salmon to the sheet pan. Place in the oven to bake for 20 minutes. Set oven to broil and cook for an additional 5 minutes.
- Toss together the purple cabbage, mango, lime juice, cilantro, and salt in a mixing bowl.
- Warm the tortillas just before serving.
- Shred the salmon and place in the tortillas. Top the salmon with the mango slaw and enjoy!
