Honey BBQ Salmon Tacos with Mango Slaw

Serves 4 | 

Deliciously healthy and surprisingly easy.

Ingredients:

1 lb salmon fillet, quartered
1 clove garlic, minced
1 tablespoon soy sauce
1/4 cup tomato paste
2 tablespoons apple cider vinegar
2 tablespoons honey
2 teaspoons smoked paprika
3 cups shredded purple cabbage
2 mangos, pitted, peeled and cut into strips
2 tablespoons lime juice
1 bunch cilantro, chopped
1/2 teaspoon salt
Corn tortillas, for serving

Directions:

  1. Thoroughly stir together the garlic, soy sauce, tomato paste, apple cider vinegar, honey and smoked paprika in a mixing bowl.
  2. Place the salmon in a resealable container. Pour the marinade over the salmon. Cover and place in the refrigerator to marinate for 1 hour.
  3. Preheat the oven to 400° F. Line a sheet pan with aluminum foil.
  4. Transfer the salmon to the sheet pan. Place in the oven to bake for 20 minutes. Set oven to broil and cook for an additional 5 minutes.
  5. Toss together the purple cabbage, mango, lime juice, cilantro, and salt in a mixing bowl.
  6. Warm the tortillas just before serving.
  7. Shred the salmon and place in the tortillas. Top the salmon with the mango slaw and enjoy!
