Brioche Breakfast Sandwich

Serves 6 | 

The ultimate on-the-go morning starter.

Ingredients:

1 lb. bacon
1 yellow onion, diced
1 tablespoon olive oil
1 tablespoon water
14 eggs
Salt, to taste
Ground black pepper, to taste
Milk
6 Brioche buns
Melted butter, for toasting buns
1/2 cup mayonnaise
1 tablespoon Sriracha sauce
1 avocado, halved and sliced
4 slices cheddar cheese

Directions:

  1. Preheat oven to 375° F. Line a baking sheet with aluminum foil and grease the foil with nonstick cooking spray.
  2. Cut bacon slices into thirds and arrange on baking sheet. Place in the oven to bake for 20-30 minutes. Once the bacon is crispy, transfer to a paper towel lined plate.
  3. Pour the olive oil into medium skillet. Bring the skillet to medium heat. Once hot, add the onions and cook until soft and golden brown. Sprinkle water over the onions part way through to help soften and steam onions.
  4. Crack the eggs into a mixing bowl. Sprinkle salt and pepper over top. Pour in milk. Whisk together. Pour the eggs into a skillet, bring to medium-low heat. Cook to a soft scramble.
  5. Brush the melted butter over the Brioche buns. Place the buns on a baking sheet and toast.
  6. Stir together the mayonnaise and Sriracha sauce.
  7. Split the Brioche buns in half. Place a few pieces of bacon on the bottom bun, followed by scrambled eggs, a few avocado slices, a slice of cheddar cheese and caramelized onions. Spread the Sriracha mayo over the top bun. Place the top bun on the onions to complete the sandwich. Enjoy!
