Bacon Wrapped Jalapenos Stuffed with BBQ Brisket Cream Cheese





Serves 14 |
The perfect appetizer for summer BBQ’s.
Ingredients:
14 jalapenos |
8 oz cream cheese |
1 teaspoon BBQ rub |
1 cup shredded pepper jack cheese |
1 lb cooked chopped brisket |
28 slices bacon |
BBQ sauce |
Directions:
- Heat the oven to 325° F. Line a baking pan with aluminum foil.
- Butterfly the jalapenos and remove the seeds. Set aside.
- Beat together the cream cheese, BBQ rub, and pepper jack cheese in a mixing bowl.
- Fill one half of the jalapeno with the cream cheese mixture and the other with the brisket.
- Wrap the jalapenos with two slices of bacon. Secure the bacon with toothpicks.
- Arrange the jalapenos on the pan. Place the pan into the oven to bake for 40 minutes. Turning the jalapenos every 10 minutes.
- After 40 minutes, brush the jalapenos with BBQ sauce. Return to the oven and bake for an additional 5 minutes.
- Remove from the oven. Transfer to a platter or large plate and enjoy!
