Bacon Wrapped Jalapenos Stuffed with BBQ Brisket Cream Cheese

The perfect appetizer for summer BBQ’s.

Ingredients:

14 jalapenos
8 oz cream cheese
1 teaspoon BBQ rub
1 cup shredded pepper jack cheese
1 lb cooked chopped brisket
28 slices bacon
BBQ sauce

Directions:

  1. Heat the oven to 325° F. Line a baking pan with aluminum foil.
  2. Butterfly the jalapenos and remove the seeds. Set aside.
  3. Beat together the cream cheese, BBQ rub, and pepper jack cheese in a mixing bowl.
  4. Fill one half of the jalapeno with the cream cheese mixture and the other with the brisket.
  5. Wrap the jalapenos with two slices of bacon. Secure the bacon with toothpicks.
  6. Arrange the jalapenos on the pan. Place the pan into the oven to bake for 40 minutes. Turning the jalapenos every 10 minutes.
  7. After 40 minutes, brush the jalapenos with BBQ sauce. Return to the oven and bake for an additional 5 minutes.
  8. Remove from the oven. Transfer to a platter or large plate and enjoy!
