Crispy Hash Brown Sausage Bites

Serves 24 | 

Perfect for breakfast or brunch.

Ingredients:

1 lb breakfast sausage
3 cups frozen shredded hashbrowns
1 cup shredded cheddar cheese
1/4 cup diced green bell pepper
1/4 cup diced onion
2 large eggs
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon dried thyme
1/4 teaspoon garlic powder
1/2 teaspoon black pepper

Directions:

  1. Preheat your oven to 375° F. Lightly grease a mini muffin tin with cooking spray.
  2. Bring a skillet to medium heat. Add the breakfast sausage and cook until browned and fully cooked. Crumble the sausage whole cooking. Drain the fat and let sit for a few minutes.
  3. Add the sausage to a large bowl. Add the hashbrowns, shredded cheddar, green bell pepper, onion, eggs, flour, salt, paprika, thyme, garlic powder and black pepper. Stir to combine.
  4. Spoon the mixture into the muffin wells. Gently press down the tops.
  5. Place into the oven and bake for 20-25 minutes, until the hashbrown bites are golden brown and the edges are crispy.
  6. Remove from the oven and let cool for a few minutes before removing and serving.
