Mediterranean Quesadillas





Serves 3 quesadillas |
A delicious change from the norm.
Ingredients:
1 cup shredded mozzarella cheese |
1/2 cup crumbled feta cheese |
1/3 cup diced red onion |
1 cup chopped spinach |
1 tomato, diced |
Canola oil, for frying |
3 burrito-size tortillas |
Directions:
- Combine the mozzarella, feta, red onion, spinach, and tomato in a mixing bowl.
- Lay each tortilla flat. Spoon 1/3 of the filling on one side of each tortilla. Then fold the tortilla in half.
- Pour a small amount of canola oil into a large pan. Bring to medium heat. Place the quesadilla in the pan and cook for 3-4 minutes per side, until lightly browned and the cheese is melted. Transfer to a plate.
- Cut each quesadilla into 4 slices. Enjoy!
