Pork Chops With Citrus Salsa





Serves 6 |
A bright and flavorful pork chop dish.
Ingredients:
6 pork chops |
1 orange |
1 grapefruit |
1 cup diced fresh pineapple |
1 fresh jalapeno pepper |
1/4 red onion |
1 tablespoon fresh coriander |
2 tablespoons olive oil |
Salt, to taste |
Black pepper, to taste |
Directions:
- Peel and dice the orange and the grapefruit, and then de-seed and finely chop the jalapeno pepper. Slice onion into thin strips and roughly cut the coriander. Mix everything in a large bowl and add a little salt, then cover and leave in the fridge for three to four hours for the flavors to develop.
- Preheat oven to 390° F. Brown the pork chops in a dash of olive oil, and then season them with salt and pepper and transfer them to an oven proof dish. Cover the dish and cook for 30-40 minutes until the chops are cooked through and tender. Remove from oven and cool for 5-10 minutes, then top with fresh salsa and serve.
