New York Strip Steak Sandwiches

Easy to assemble and easy to enjoy.
Ingredients:
1 lb. boneless New York strip steak |
3 tablespoons olive oil |
2 yellow onions, peeled and sliced into rings |
1/2 teaspoon fresh thyme |
2 sub rolls |
Mayonnaise, to taste |
Dijon mustard, to taste |
Kosher salt, to taste |
Ground black pepper, to taste |
Directions:
- Season both sides of steak with salt and pepper. Cover steak with aluminum foil and let rest for 10 minutes.
- Pour half of the olive oil into a skillet. Bring to medium-high heat and cook for about 4 minutes on each side. Transfer to a plate and slice into strips.
- Pour the remaining olive oil into the same skillet and reduce to medium heat. Saute onion and thyme for about 10 minutes, until onions are caramelized.
- Spread mayonnaise and mustard over bottom half of each roll. Top with a layer of steak strips and caramelized onion rings. Season with additional salt and pepper. Place top bun on and enjoy!
