Peanut Butter Granola Cups





Serves 12 |
Healthy, delicious, and perfect for snacking.
Ingredients:
For the Cups: |
2 1/2 cups granola |
3 tablespoons honey |
1 cup peanuts, chopped |
3 tablespoons peanut butter |
For the Filling: |
1 cup peanut butter |
For the Topping: |
12 oz dark chocolate, finely chopped |
1 tablespoon coconut oil |
Directions:
- Stir together the granola, honey, peanuts, and peanut butter in a mixing bowl.
- Grease a 12-count muffin tin with baking spray. Divide the granola mixture amongst the 12 muffin cups. Press the granola down into each muffin cup and make a dimple in the center of each one. Place the muffin tin in the freezer to chill for 10 minutes.
- Melt the peanut butter for the filling. Pour the melted peanut butter into the dimple of each granola cup. Return to the freezer to chill for another 10 minutes.
- Melt the dark chocolate and coconut oil in a microwave safe bowl. Spoon the melted chocolate over the peanut butter. Return the muffin tin to the freezer and let chill until chocolate is fully set.
