Peanut Butter Granola Cups

Serves 12 | 

Healthy, delicious, and perfect for snacking.

Ingredients:

For the Cups:
2 1/2 cups granola
3 tablespoons honey
1 cup peanuts, chopped
3 tablespoons peanut butter
For the Filling:
1 cup peanut butter
For the Topping:
12 oz dark chocolate, finely chopped
1 tablespoon coconut oil

Directions:

  1. Stir together the granola, honey, peanuts, and peanut butter in a mixing bowl.
  2. Grease a 12-count muffin tin with baking spray. Divide the granola mixture amongst the 12 muffin cups. Press the granola down into each muffin cup and make a dimple in the center of each one. Place the muffin tin in the freezer to chill for 10 minutes.
  3. Melt the peanut butter for the filling. Pour the melted peanut butter into the dimple of each granola cup. Return to the freezer to chill for another 10 minutes.
  4. Melt the dark chocolate and coconut oil in a microwave safe bowl. Spoon the melted chocolate over the peanut butter. Return the muffin tin to the freezer and let chill until chocolate is fully set.
