Baked Hawaiian Chicken





Serves 4 |
Sweet and savory in all the right ways.
Ingredients:
2 boneless skinless chicken breasts |
1 tablespoon olive oil |
Salt, to taste |
Ground black pepper, to taste |
1 red bell pepper, chopped |
1 orange bell pepper, chopped |
1 yellow onion, chopped |
1/2 cup Hawaiian BBQ sauce |
1 can pineapple chunks, drained, 20 oz. |
2 teaspoons lime juice |
Cooked rice, for serving |
Directions:
- Preheat the oven to 350° F. Line a baking sheet with parchment paper.
- Slice the chicken into pieces and add to a mixing bowl. Drizzle olive oil and season with salt and pepper. Toss to coat.
- Add chopped bell peppers and onion to the bowl. Pour BBQ sauce over top and toss to combine.
- Transfer chicken mixture to the baking sheet and spread out evenly. Place in the oven and bake for 20 minutes.
- Remove the baking sheet from the oven and add the pineapple chunks. Place back into the oven and bake for an additional 20 minutes.
- Remove baking sheet from the oven. Squeeze the lime juice over top.
- Spoon BBQ chicken and pineapple onto a bed of rice and enjoy!
